Homemade green Pesto with Dellugo Gnocchi

You will never buy ready made Pesto again, after you have tried and tasted this fresh easily made alternative.

Serve with your favorite pasta dishes.

Ingredients

50g pine nut
80g basil
75g grated Parmesan
200ml olive oil
4 garlic clove

1 x packet of dellugo gnocchi

half a bag of baby leaf spinach

Method

Gently toast the pine nuts until golden brown, tossing occasionally to avoid any burning.

Pour oil into a blender along with the garlic and basil, blend until the garlic is in small chunks.

Add the Parmesan and pine nuts then blitz until well mixed.

Boil the Dellugo gnocchi for about 2 minutes or until they start to float to the top of the water, drain.

Whilst the gnocchi is still hot stir in half a packet baby leaf spinach and mix in pesto to taste and serve.
