You will never buy ready made Pesto again, after you have tried and tasted this fresh easily made alternative.
Serve with your favorite pasta dishes.
50g pine nut
75g grated Parmesan
200ml olive oil
4 garlic clove
1 x packet of dellugo gnocchi
half a bag of baby leaf spinach
Gently toast the pine nuts until golden brown, tossing occasionally to avoid any burning.
Pour oil into a blender along with the garlic and basil, blend until the garlic is in small chunks.
Add the Parmesan and pine nuts then blitz until well mixed.
Boil the Dellugo gnocchi for about 2 minutes or until they start to float to the top of the water, drain.
