Pea, mint and bacon soup recipe

Pea soup with a twist

Spring is here and whilst the warmer weather tends to swing our tastebuds towards salads you still can’t beat a refreshingly delicious soup, and whether eaten as lunch, starter or snack, you can’t go wrong with this simple pea, bacon and mint soup recipe…

Ingredients

20g butter
1 Medium potato chopped into small chunks
1 small red onion
3 Cloves of garlic
800ml Stock (chicken or vegetable, I use chicken)
500g Frozen peas
1 bunch fresh mint leaves
Half tea spoon salt
Tea spoon black pepper
3 bacon streaky bacon rashes

Method

  1. Chop onion and garlic to sauté. Add butter, onion, garlic & potato to pan, gently sauté for about 7 mins until onions are glassy and potato is starting to soften.
  2. Add stock, boil until potato is soft. About 5 mins.
  3. Meanwhile, whilst the potato is boiling. Cook your streaky bacon under the grill.
  4. Once potato is soft, add peas and mint, and season with salt and pepper. Bring to boil and cook until peas are soft, about three minutes.
  5. Remove from heat and whizz in your Blender, or using soup wand (if you have one, mine broke).
  6. Chop streaky bacon, and put your soup in your bowl. Top with the streaky bacon and then serve!
  7. See I told you it was easier than easy!
