The ultimate vegan ice cream recipe

The healthy way to kick that sugar craving…

Summer is coming and with that comes the urge to have ice cream for breakfast, lunch and dinner …(Or maybe that’s just me?!) … Well, we all love a good old 99 cone from the ice cream van, but let’s be honest, they aren’t the most diet friendly option, both health wise or calorie wise, not exactly the most helpful thing when you’re working hard to maintain a bikini bod!

With that in mind I decided it was only fair to share my favourite ‘Ultimate Vegan Non Dairy Ice Cream’ recipe, depending on your choice of flavourings and toppings, you can take the basic banana ice cream recipe from minimal calories to maxing it out! Whether like me, you love to jazz it up a bit or prefer the simpler things in life, go give it a whirl!

Dairy Free Ice Cream

The best part is the riper the bananas the better the ice cream, so if you’re not a fan of the brown overly ripened bananas hanging around in the fruit bowl, pop them in a freezer and you’ll be ice cream making before you know it!

 Here are my 3 slightly naughtier ice cream options, packed full of amazing flavours and definitely a favourite amongst family and friends! Lovingly named by me, I give you, Choc  Mania, Butter Me Up and Cheeky Cherry …

Choco Mania

The answer to all your chocolate needs, packed with ‘oodlings’ of chocolate loving.

Ingredients

2 Frozen Bananas (Chopped into 1” pieces)
2tbsp Dark Cocoa
½ Cup Chocolate Soya Milk
1 Cup Dark Chocolate Chips

Toppings

Dairy Free Chocolate Sauce (Shop bought)

Method

Pop the banana, cocoa, almond milk and half the cup of chocolate chips into a blender and whizz up until it’s a thick custard consistency.
Pour into a freezable container and leave over night, or a minimum of 4 hours, until its set like soft scoop ice cream.
Serve into your prettiest Ice Cream dish, top with the chocolate sauce and remainder of the chocolate chips. Enjoy!

Butter me up

For those of us who have a slight Peanut Butter obsession. A bit more guilt and calories, but so good! The perfect treat!

Ingredients

2 Frozen bananas (Chopped into 1” pieces)
½ Cup plain Soya Milk
1 ½ tbsp Crunchy Peanut Butter
½ Cup Salted Peanuts

Toppings

2tsp Smooth Peanut Butter

Method

Pop the banana, soya milk, peanut butter and half the salted peanuts into a blender. Blend until its like a thick custard, with no banana lumps.
Pour the mixture into a freezable container, freeze over night or for a minimum of 4 hours, until it’s like a soft scoop ice cream consistency.
For the sauce, melt the 2tsps of smooth peanut butter in a ramekin over boiling water, until its like a runny ‘pouring sauce’.
Serve up the ice cream into your favourite sundae glass. Top with the peanut butter sauce and a sprinkling of crushed salted peanuts … Ahh bliss.

Cheeky Cherry

The perfect sundae for those wanting to bring a bit of colourful fun to their day.

Ingredients

2 Frozen Bananas (Chopped into 1” pieces)
1tbsps Morello Cherry Jam
½ Cup of morello cherries in syrup (drain off the syrup)
½ Cup of Plain Soya Milk

Toppings

Hundreds and Thousands
Non Dairy Chocolate Sauce (Shop bought)
Glacier Cherries

Method

Put the bananas, jam, drained cherries and soya milk into a blender and blitz until it’s of a thick custard consistency, with no banana lumps.
Pour into a freezable containers and pop in the freezer overnight or for a minimum of 4 hours.
Serve up your ice cream into your favourite sundae glass. Alternate scoops of ice cream with the cocolate sauce until full. Top with more chocolate sauce, sprinkles and any other decorations you fancy, pop on a glacier cherry as the pièce de résistance.
