First Look: Amethyst Restaurant Mayfair

Carlo Scotto, previously head chef at Xier in Marylebone, announces his new restaurant will open this May on Mayfair’s Sackville Street. The charismatic Neapolitan who earned rave reviews for his creative and hyper-original tasting menus is picking up where he left off pre-2020 with the opening of Amethyst restaurant Mayfair.

Spread over two floors, and at just 36-covers, Amethyst will offer an intimate gastronomic experience with elegant pared-back interiors incorporating raw materials, concrete and wood creating a neutral canvas where the food is the star. The ground floor features just one table – a jaw-dropping real amethyst (Carlo’s birthstone) and quartz bespoke centrepiece – seating 20 diners in full view of the pass. The irregular shaped table has been designed to ensure that each party enjoys their own intimate space whilst providing an interactive dining experience where guests can engage with Chef.

What food can I expect at Amethyst Restaurant Mayfair?

Amethyst’s 12-course tasting menu takes diners on a gastronomic journey of meticulously prepared plates featuring clever and creative flavour combinations, influenced by the simplicity and elegance of Nordic and Japanese cuisine, with French and Arabic influences. Whilst the menu will change regularly based on the availability of the best seasonal British produce, diners can expect the likes of Burnt Hay Croquette; Yuba Tartelette with Caviar & Scallops; Salmon & Foie Gras; Caramel Miso Black Cod & Naganegi Dashi; and Ras El Hanout Beef, Apple & Date.

What drinks will be served at Amethyst Restaurant Mayfair?

On the lower ground floor, the Wine Cellar will showcase Amethyst’s extensive collection of fine and rare vintages whilst offering a six-course tasting menu option in addition to the 12-courses. Tasting menus are excellently matched with wines courtesy of Sommelier Filippo Carnevale and diners can choose from the Classic wine pairing or, for a truly elevated experience, the Prestige selection.

Amethyst will open Tuesday to Saturday, offering six and 12-course tasting menus at £90 and £150 respectively with a three and five-course lunch menu available on both floors. For a bespoke experience, the Chef’s Table can be booked exclusively for private dinners for up to 20 diners, tailored to your tastes/the occasion; whilst the Wine Cellar can also be booked for dinners of up to 16 or drinks & canapé parties of 30.

A little more about head Chef Carlo Scotto

Carlo started cooking at a young age next to his grandmother, entering his first professional kitchen at the tender age of 13, when he took a job as a chef apprentice at the Michelin-starred restaurant Don Salvatore. 

With time spent in some of the world’s renowned kitchens, travelling became an integral element in the development of his craft with Carlo making Japan, France and Sweden, among other countries, his home. His passion and determination to become a leading chef grew into an obsession and his path took him to some of London’s top kitchens to hone his skills, including those of Gordon Ramsay Holdings, Angela Hartnett at Murano and Galvin at La Chapelle to name a few. 

Carlo Scotto commented: “It’s been a tough couple of years, but I am delighted to finally be behind the stoves again and in my own restaurant.  It’s a dream to have been able to create the perfect canvas for my cooking and I can’t wait to welcome diners to Amethyst.”
