Ingredients:
- 1 vanilla pod
- 700g granulated sugar
- 120ml whole milk
- 120ml double cream
- 60g unsalted butter, cubed
- 1/2 tsp sea salt
- Optional: 40g chopped nuts or dried fruits for texture
Method
- Prepare the Vanilla Pod:
- Split the vanilla pod lengthwise and scrape out the seeds with a sharp knife. Set aside the seeds and the pod.
- Combine Ingredients:
- In a heavy-bottomed saucepan, combine sugar, milk, cream, butter, and the vanilla seeds. Add the scraped vanilla pod to the mix for extra flavour.
- Heat the Mixture:
- Place the saucepan over medium heat and stir until the sugar dissolves completely.
- Attach a candy thermometer to the pan and bring the mixture to a boil without stirring further.
- Cook to the Right Temperature:
- Heat the mixture to 115°C, known as the “soft ball stage.” This ensures the fudge will set properly.
- Remove from Heat:
- Take the pan off the heat and discard the vanilla pod. Allow the mixture to cool to about 43°C
- Beat the Fudge:
- Using a wooden spoon or an electric mixer, beat the cooled mixture until it thickens, loses its glossy appearance, and starts to hold its shape. This process helps create a creamy texture.
- Add Mix-Ins (Optional):
- If desired, fold in chopped nuts or dried fruits for added texture and flavour.
- Set the Fudge:
- Pour the fudge into a lined 8×8-inch (20x20cm) baking dish, spreading it evenly. Allow it to cool at room temperature until firm.
- Cut and Serve:
- Once set, cut the fudge into small squares and serve. Store in an airtight container at room temperature for up to a week.
