Ingredients
50g Sugar
300 ml of water (to include the juice from the pineapple tin)
100 ml White vinegar
2 heaped tsp corn flour
Red/yellow food colouring (or for a natural alternative, you can use a couple of sprigs of saffron like I did not too much though as we don’t want to add saffron flavour)
2 large chicken breast sliced
Corn starch batter to cover chicken (or you can use whatever batter
recipe you normally use)
Oil to fry chicken
2 carrots sliced
1 red pepper sliced
1 small tin of pineapple
2 spring onion sliced
Directions
To make the sweet and sour sauce
Mix the Sugar, water, vinegar, 2 tea spoons of cornstarch and food colouring. Add more sugar or vinegar depending on your taste, sweeter or sharper.
Gently fry the carrot and pepper until soft. Tip in the pineapple and stir. Taste, and add more sugar or vinegar if needed.
Add the sauce to the pan, bring to boil (if sauce is not thick enough add remaining cornstarch).
To make the chicken Chicken.
Coat the chicken in batter, fry on medium heat until chicken is well cooked.
For a healthier alternative cook chicken first and then dip in to batter and quickly fry until batter is just cooked.
Add chicken to sauce, and throw on the spring onion.
Voila you are done!
