American style fluffy pancakes
Serve these pancakes with lashings of maple syrup and crispy streaky bacon for a real lunch treat, or with fruit for a delicious breakfast.
This recipe makes 8 large pancakes but can easily be halved to make 4.
Ingredients
9 1/2 OZ plain flour
2 tsp baking powder
1tsp Salt
6 tbsp caster Sugar
260ml Buttermilk/Milk
2 large eggs
4 tbsp Butter
Butter for frying the pancakes

4 mins per pancake (depending on thickness – you’ll know when it’s done)
Method
1. Start by melted the butter in a small bowl in the microwave – leave I one side to cool slightly for now
2.Sift all the dry ingredients (flour, salt, baking powder, sugar) together, in a large bowl.
3. Whisk the milk and egg together. Add in the melted butter and lightly whisk again.
4. Make a well in the flour mixture and pour in milk mixture. Whisk together well – until all lumps disappear. Leave batter to stand for a few mins.
5. Melt a tbsp of butter in a frying pan, once it’s hot ladle a spoonful of the mixture into the pan. Wait until the batter has started to bubble on top and flip over.
6. Repeat step 5 without the melted butter until you have used all of your batter.
7. Serve with lashings of maple syrup and crispy bacon, fruit and cream or simply just butter.
