A taste of London’s fine-dining scene is heading to the Caribbean this November, as two-Michelin-starred chef Alex Dilling brings his acclaimed modern French cuisine to Round Hill Hotel & Villas in Montego Bay, Jamaica.
The exclusive culinary collaboration will see Dilling join forces with fellow member hotel Hotel Café Royal in London for a limited three-day residency from 26–28 November 2026, giving guests the opportunity to experience his distinctive cooking against the backdrop of one of Jamaica’s most iconic luxury resorts.
Known for his precise technique, artistic presentation and focus on exceptional seasonal ingredients, Dilling has established himself as one of the UK’s most celebrated chefs. His namesake restaurant at Hotel Café Royal made an impressive entrance onto London’s dining scene, earning two Michelin stars just six months after opening in 2023 – making it the only new UK restaurant that year to receive the distinction.
His cuisine takes inspiration from the traditions of classical French gastronomy but gives them a distinctly contemporary edge, with carefully considered ingredients and beautifully presented plates at the heart of the experience. His work was also recognised on the 50 Best Discovery list in 2024, further cementing his international reputation. Now, rather than heading to another European dining room, Dilling is taking his kitchen to the Caribbean.

The residency begins with The Art of the Craft, a complimentary live cooking demonstration available to all Round Hill guests.
The experience offers a behind-the-scenes look at Dilling’s approach to fine dining, with the chef showcasing some of the techniques and craftsmanship behind his Michelin-starred cooking. For food lovers, it promises an opportunity to see the precision involved in creating the dishes that have earned Dilling international acclaim, while gaining a greater insight into his modern interpretation of French cuisine.
Saturday 28 November: The Grand Finale Dinner
The culinary collaboration will reach its finale on Saturday 28 November with an exclusive five-course tasting menu.
Expect Dilling’s signature combination of classical French influences and modern culinary innovation, with each course carefully prepared and presented as part of an immersive dining experience. Set within Round Hill’s tropical surroundings, the dinner will bring together the sophistication of London’s Michelin-starred dining scene with the relaxed atmosphere of Jamaica’s Caribbean coast.
A London-to-Jamaica Culinary Collaboration
The residency is part of a collaboration between two hotels within The Set Collection, connecting Hotel Café Royal in London with Round Hill Hotel & Villas in Montego Bay.
